Tastes on the Fly will include Denver International (DEN) in its portfolio come spring.
The company will open Modmarket, a fast-casual restaurant offering healthy food, as part of the Terminal B Center Food Court.
“We look forward to showing Denver travelers our commitment to great food and outstanding operations,” says CEO Michael Levine. “We built the company on the philosophy that eating at the airport should be as enjoyable at eating at a street location. We also believe that airport restaurants are important gateways to local cuisine. It’s an honor to expand DIA’s sense of place by bringing Modmarket’s delicious soups, salads and wraps to Terminal B.”
The eatery was founded in 2009 by Anthony Pigliacampo and Rob McColgan. It offers made-from-scratch, sustainably sourced foods for breakfast, lunch and dinner. The DEN location is the restaurant’s first in an airport.
“Tastes on the Fly’s restaurants in Terminal 2 at [San Francisco International] SFO completely changed our expectations of the quality of fare that can be served in an airport,” says Pigliacampo. “We believe that their team can take our scratch-cooked recipes, execute them to our standards in a challenging operational environment and seamlessly deliver them to travelers.
